Our Story

AshTree Whiskey was born from a simple belief: the Central Valley deserves a spirit that reflects its hardworking, uncompromising nature. Located in Fresno, California, we are dedicated to the meticulous craft of blending and bottling small-batch whiskeys.

The AshTree Standard

We don't believe in cutting corners. Our whiskey is strictly non-chill filtered, ensuring that the heavy oils, natural esters, and deep flavors developed during the aging process are delivered straight to your glass. While mass-produced spirits are filtered to near-water consistency, we prefer a robust, thick mouthfeel.

The Rebellion

In 1791, independent distillers stood their ground against a heavy-handed government tax, sparking the historic Whiskey Rebellion. They fought for the right to craft their spirits on their own terms.

The eagle and thirteen stars of the Rebellion flag symbolized grit, independence, and an refusal to compromise. At AshTree Whiskey, we bottle that exact same spirit. We aren't beholden to massive corporate distillation conglomerates. We select, we blend, and we bottle with the fierce independence of the distillers who came before us.
